Wild Rice Salad

A nice summer salad, easy to prepare and a nice change of pace from traditional lettuce salads.




Ingredients:

1 cup wild rice mix (I use brown and wild rice)
2 green onions, finely chopped
1/2 cup dried cranberries
1/2 cup mandarin oranges (tinned), broken into pieces
1/4 cup red pepper, finely chopped
1/2 cup snap peas, chopped
1/2 pecans, optional

Dressing:
1/4 cup orange juice
1 Tbsp cider vinegar
1/4 cup vegetable oil
1 Tbsp sesame oil
1/2 tsp honey, optional


Prepare rice according to directions.  Run under cold water to cool.

Add all ingredients, along with rice, to a bowl.  Add dressing and gently toss.
